Only a few hundred kilograms exist worldwide each year. The greater part never reaches the open market.
Grande Rarité is the most uncompromising selection produced by our atelier. From all the Persian Blue Salt that reaches us, we choose only those crystals distinguished by exceptional clarity, transparency, depth of colour and expression. Every individual crystal is selected, examined and assessed by hand in our Swiss atelier. It is then carefully broken by hand and meticulously sorted by size, creating the different grain sizes within the Grande Rarité line.
With its fine grain of 0.5–1.5 mm, Grande Rarité is equally suited to refined everyday cooking and precise finishing directly on the plate. Its flavour is exceptionally clear, mineral and harmonious – with a depth and purity that industrially processed salt cannot attain.
