The K designation describes the proportion of gold in an alloy. 24K denotes virtually pure gold (999/1000). 23K contains approximately 95.8% gold, while 22K contains approximately 91.7%.

In fine dining, edible gold is generally used at very high levels of purity. The higher the K designation, the purer and warmer the gold appears. 24K gold leaf reveals the purest expression of the gold tone – soft, deep and classic. 23K gold leaf likewise offers exceptional purity, while its alloy may make it slightly more stable to work with and give it a subtly different nuance of colour.

22K gold is also highly refined, but contains a greater proportion of other precious metals. This can influence both colour and handling: it is generally easier to work with than 23K or 24K because it is less prone to adhering to itself.
