The Story Behind
Huber Gold Quality
Our edible gold products are created in close cooperation with one of Europe’s oldest gold-leaf manufacturers. They are produced exclusively for Huber Gold to specifications that meet our standards for purity, uniformity, hygiene and professional use.
Every gold leaf booklet and every jar of gold flakes, gold powder or special shapes carries a unique, traceable batch number. This requires additional effort, but provides security, control and reliability. With edible gold in particular, traceability is an essential part of quality.
Our online shop deliberately presents only a small, carefully selected range.
For professional applications, larger quantities, or special projects, significantly more variations are available upon request:
Gold flakes are available in six different sizes and gold powder in at least three degrees of fineness. These qualities are available in 22K and 23K.
The same range of formats is available for silver leaf, silver flakes and silver powder (fineness: 999.0/1000).
In our shop, 24K is offered primarily as gold leaf. For our hand-gilded sugar products and salts, we use exclusively 24K gold. This purity is exceptionally precious, but also more demanding to work with. 24K gold flakes and 24K gold powder can likewise be supplied on request, although not in every size and degree of fineness. The very finest powder grades cannot be produced and handled in 24K in the same way.
For most culinary applications, 22K and 23K gold flakes or gold powder are the more practical choice. Our 23K qualities contain pure silver and minute quantities of pure copper in addition to gold, and are also available in 22K on request. This alloy improves handling, dispersal and visual effect. Copper-free qualities with a higher proportion of silver can also be supplied on request; these tend, however, to flow somewhat less freely and may adhere to themselves more readily.
Pure 24K gold is particularly soft and, in the form of flakes or powder, may cling together more strongly. It is less easy to disperse and is therefore unsuitable for many gastronomic applications. 24K may be appropriate where the highest possible gold purity is the principal consideration – for example in certain cosmetic applications or formulations. For pâtisserie, confectionery, gastronomy, beverages and decorative use, we generally recommend the appropriate 22K or 23K qualities.
Larger quantities, special sizes, particular degrees of fineness and individual specifications are available on request.
Only a little is required.
But that little must be perfect.
